Black Beans & Rice

 
     
 

Combine:

  • 3 cans black beans (Goya or other)
  • 2 cloves minced garlic
  • 1 medium onion
  • ½ green pepper finely chopped
  • 4 -5 tablespoons olive oil (extra virgin)
  • 5-6 tablespoons red wine vinegar
  • salt to taste
  • pepper to taste
  • 16- 32 ounces YELLOW rice (I prefer Vigro)
  • Add the above ingredients (except rice) into a pot and cook slowly for 2-3 hours.

    (Note add more oil and vinegar to taste).

    Serve over cooked rice with minced onions, red wine vinegar and Tabasco sauce (all to taste).
